How to choose a DF grinder
There isn’t one DF grinder that’s right for everyone. Your ideal grinder depends on the coffee you drink, how you prepare it and how much control you want over the grinding process.
Conical vs. flat burr grinders
One of the most important differences is burr geometry.
The DC54 and DC63 use conical burrs, which emphasize body, texture and a rounder flavour profile. They are particularly well suited to traditional espresso, milk drinks, and medium to darker roasts.
The DF54, DF64 Gen 2, DF64V, DF83 and DF83V use flat burrs, which emphasize clarity and flavour separation. Their broader grind range also makes them versatile choices for espresso and filter brewing.

54 mm grinders such as the DC54 and DF54 provide a compact platform well suited to everyday home use.
64 mm grinders such as the DF64 Gen 2 and DF64V offer greater grinding speed and access to one of the widest selections of aftermarket burr geometries, making the 64 mm platform especially attractive to enthusiasts who want to customize their grinder over time.
83 mm grinders such as the DF83 and DF83V use a much larger grinding surface for fast grinding and are designed for enthusiasts looking for a high-performance home grinding platform.
Fixed speed vs. variable speed
Most DF grinders keep operation simple with a fixed motor speed.
The DF64V and DF83V add variable-speed grinding, allowing you to adjust burr RPM and experiment with another variable in the grinding process.
For most users, variable RPM isn’t necessary to make excellent coffee. It is most useful for enthusiasts who want additional control over how their grinder operates.
Espresso or filter coffee?
If you primarily drink traditional espresso or milk-based drinks, particularly with medium and darker roasts, a conical-burr model such as the DC54 or DC63 may suit your preferences.
If you prefer clarity, lighter roasts, pour-over, or regularly switch between espresso and filter, one of the flat-burr DF models may be a better fit.
